The term “salad” generally refers to a cold dish, which contains cut, raw or cooked vegetables, and seasoned with salt, vinegar and oil. With the passage of time and due to the processes of cross-cultural merging, salads became more complex dishes, which today incorporate cheese, seafood, meat, poultry, eggs, pasta, fruit, legumes, viands and oil seeds, among other genres. Nowadays they can also be hot or warm; they are served not only as starters or accompaniments, but also as main dishes depending on their composition.
Salads guarantee that our body receives a significant dose of nutrients, many of which are carriers of high antioxidant, anti-inflammatory and antimicrobial values. Thus, they are considered first-rate foods because of their predominant content of simple carbohydrates, vitamins, mineral salts, enzymes and dietary fiber.
With the appearance of COVID-19 these preparations take on a higher significance, as they contribute to the strengthening of our immune system and the prevention of multiple diseases.
