Between Tacos and Fajitas

With the aim that the readers accompany us tonight and can enjoy other nights, a description and the ways of preparation of some of these typical dishes are explained below.
In the first place, the fajitas norteñas drew our attention. This recipe is fairly simple:
The oil is placed on a frying pan and heated, and then the green pepper, the onions á la Juliana are added until getting lightly golden, then the beef, chicken and pork or some amount of these meats cut in the shape of narrow strips, previously marinated with salt, lemon and pepper are added. Everything is mixed and fried. Then the mixture is placed on a corn or flour tortilla. Finally the tendency is to sprinkle it with cheese and eat it in the form of taco, the most typical and practical dish, since the fried and stuffed tortilla is eaten with the hands.
Nachos with cheese and chili, this is a very typical and simple dish to elaborate. It is the fried corn triangular-shaped tortilla, sprinkled with cheese sauce and accompanied by sliced chilis.
The burritos stuffed with cooked minced meat and red tomato sauce, is a sort of combination with chili and spiced meat: a true delicious choice; the tortilla usually is soaked in bean sauce.
Other dishes that make up the Mexican gastronomic universe are:
Quesadillas, now in vogue in Mexico, consists of omelets stuffed with cheese, the guacamole, is made with the macerated and spiced avocado meat; the mole poblano is elaborated with sauce paste, prepared with chilis; though chocolate or sesame is also used in its preparation.
Such nights are charming because, “everything is filled with light,” according to Urueña. The elaboration, local decoration, music and general atmosphere blend to offer a genuine Mexican party.
