Valdepeñas Denomination of Origin is Spain’s third wine institution in terms of its antiquity. Its 22,000 hectares are perched on the southern side of the south plateau, Castilla-La Mancha province. Both weather and soil conditions, as well as the grape harvest and wine-making process, are key aspects when it comes to creating wines with unique characteristics. The president of the DO, Carlos Nieto Sepúlveda, gave Excelencias Gourmet an exclusive interview on these matters.
