Eusebio is a patron of excellence, one of those cooking connoisseurs who appreciate the truth, especially because he enjoys food with exquisiteness and conscience, because he can recall the tastes and understands each and every flavor. I say “man” when I should instead refer to him as Dr. Eusebio Leal Spengler, the historian of Havana, someone full of honors and titles –more lines will be needed to mention them all. But today we’ll talk about food, history and tradition, sitting at a table. And it’s in this sacred place where we are all family, so perhaps Eusebio could forgive us this laidback attitude. Today, as always, the distinguished Leal Spengler is part of the Excelencias Gourmet family. “Cooking is a laboratory, a center for experimentation in which the master always comes up with what the patron wants; a multicultural space, a cult for the senses in which everything plays a part,” said Mr. Leal Spengler during the opening of the Fifth “Saborear lo Cubano” Meeting, an event sponsored by the Habaguanex S.A. travel company.
